I play with a 5 iron with 59.5 degree lie angle. All my clubs show me hitting shots toward the toe of the club head. Mis**ts tend to go left. Assuming no faults with my swing, would the assumption be that I would need a flatter lie angle? From what I have read, it would appear that way but thougths are welcomed.

Yes and now, provided your swing is fine your setup could also be a likely culprit. Too far from the ball

Since you think the issue is lie angle, lie board test will verify it 100%. My tendency is towards the heel and being opposite to your symptoms, mine is swing issue rather than needing it more upright.
