Its about 4 hours from Tokyo by car and 1 hr and 37min by train and there is not much in Niigata besides the steel industry though there are some very nice traditional Ryokans (Japanese Inns) and onsen (hot springs). Day trip is tough man but it could be done if you go early in the morning and come back the evening. My wife and I arrived the day before stayed over night, enjoyed the local sights and food and hot springs. Went to the endo the next day morning with TSGolfer and Girl, toured the shop and the factory and facilities, had meetings and then out for a late lunch with the Endo execs then caught the train back to Tokyo mid to late afternoon.
